Healthy easy roasted mutton sandwiches recipe. Chop sufficient cold roasted mutton to make a pint (± 500 ml); then add:
- 2 solid tomatoes from a can of tomatoes, or two fresh tomatoes, peeled
- remove seed from tomatoes and chop flesh fine
- 1/2 cup piñons or pine nuts,
- olive oil to bind the everything together.
Spread on biscuits or crackers and serve for afternoon tea or supper.
